Cheese Huckleberry Pie 

Ingredients: – 1 1/2 cups huckleberries (fresh or frozen) – 1/2 cup sugar – 2 tablespoons cornstarch – 1 tablespoon lemon juice

– 1 pre-made pie crust (or make your own) – 8 ounces cream cheese, softened – 1/2 cup powdered sugar – 1 teaspoon vanilla extract – 1 cup whipped cream

Instructions: 1. Preheat your oven to 375°F (190°C). 2. In a medium saucepan, combine the huckleberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens and the berries start to burst, about 5-7 minutes.

1. Roll out your pie crust and place it in a pie dish. Trim any excess dough and crimp the edges as desired. 2. In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.

1. Spread the cream cheese mixture evenly over the bottom of the pie crust. 2. Pour the cooled huckleberry filling over the cream cheese layer. 3.
