For the Cinnamon Filling: – 1/4 cup granulated sugar – 1 tablespoon ground cinnamon
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, ground cinnamon, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. In a small bowl, mix together the granulated sugar and ground cinnamon for the filling.
Roll out the cookie dough on a lightly floured surface to about 1/4 inch thickness. Use a knife or pizza cutter to cut the dough into strips, about 1/2 inch wide.
Sprinkle the cinnamon sugar filling over half of the dough strips. Carefully place the remaining dough strips on top of the filled strips in a lattice pattern.
Use a cookie cutter or knife to cut out cookies in desired shapes. Transfer the cookies to the prepared baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
