– 1 1/2 cups all-purpose flour – 1/2 cup granulated sugar – 1/2 cup shredded coconut – 1 tsp baking powder – 1/2 tsp baking soda
– 1/4 tsp salt – 1/2 cup coconut milk – 1/4 cup melted coconut oil – 1 large egg – 1 tsp vanilla extract – 1/2 cup unsalted butter
– 1 cup brown sugar – 1/4 cup heavy cream – 1/2 tsp vanilla extract – 1/2 tsp sea salt – 1 1/2 cups powdered sugar
Preheat oven to 350°F (175°C) and grease a donut pan. Mix dry donut ingredients in one bowl, wet ingredients in another. Combine.
Bake donuts for 10-12 mins; cool on wire rack. Make caramel by melting butter, adding brown sugar and cream, boiling, then adding vanilla and salt. Cool slightly.
Whisk powdered sugar into caramel until smooth. Dip cooled donuts into caramel frosting, let excess drip off, and sprinkle with shredded coconut if desired.
Let frosting set before serving.
