Creamy Chocolate Mousse Pie

Ingredients: – 1 pre-made pie crust (or homemade if preferred) – 5 cups fresh strawberries, hulled and halved – 3/4 cup granulated sugar – 2 tablespoons cornstarch

– 1/4 cup water – 1 tablespoon lemon juice – Whipped cream or vanilla ice cream for serving (optional)

Preheat the Oven: – Preheat your oven to 375°F (190°C).

Prepare the Pie Crust: – Line a 9-inch pie dish with the pre-made pie crust, pressing it gently into the bottom and up the sides of the dish. Trim any excess dough hanging over the edges.

Prepare the Strawberry Filling: – In a medium saucepan, combine 2 cups of the strawberries (reserve the remaining strawberries for later), granulated sugar, cornstarch, water, and lemon juice.

Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy, about 5-7 minutes. Remove from heat and let cool slightly. 

Assemble the Pie: – Arrange the remaining strawberries in the pie crust, filling it evenly. – Pour the cooked strawberry mixture over the strawberries in the pie crust, spreading it out to cover the strawberries completely.

Bake the Pie: – Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.

Cool and Serve: – Allow the pie to cool on a wire rack for at least 1 hour before slicing and serving. – Serve slices of the pie with whipped cream or vanilla ice cream, if desired.
