Ingredients 1 (14.1 ounce) package double-crust pie pastry, thawed ½ cup white sugar 3 tablespoons all-purpose flour 1 teaspoon ground cinnamon
1 teaspoon lemon zest ¼ teaspoon salt 5 cups peeled and sliced pears 1 tablespoon butter 1 tablespoon lemon juice
Directions Heat the oven to 450°F (230°C). Add a baking sheet to the bottom oven rack. One pie dough lines a 9-inch pie plate bottom and sides. Set aside second crust.
Stir sugar, flour, cinnamon, lemon zest, and salt in a bowl. Layer pear slices in crust and sprinkle sugar mixture over each layer. Put butter and lemon juice on.
Bake on the baking sheet for 10 minutes in the preheated oven. Reduce oven temperature to 350 degrees F (175 degrees C) and bake 35–40 minutes longer until crust is golden brown and filling is bubbling. Serve after several hours of cooling.
