Maple Syrup Pie

Ingredients 3 tablespoons cornstarch 2/3 cup water 1-1/2 cups real maple syrup 2 tablespoons butter Pastry for double-crust pie

Directions Preheat oven to 400°. Cornstarch and water should be smooth in a big saucepan; add syrup. Boil and stir until thickened, 4 minutes. Melt butter after removing from heat. Allow to cool.

Roll bottom crust dough to 1/8-inch thickness on a lightly floured board and transfer to a 9-inch pie pan. Cut crust 1/2 in. beyond plate rim; flute edge.  

Cool 30 minutes. Roll leftover dough to 1/4-inch thickness and cut maple leaves with 1-1/2- to 2-1/2-inch cookie cutters. Chill on a baking sheet.

Put maple filling in pie pan. Lower oven rack for 10 minutes. Turn down oven to 350°. Bake 35-40 minutes until crust is brown and contents bubbling.

Cool thoroughly on wire rack. Leaf cuts should be golden brown in 8-10 minutes. Place cutouts on pie to serve.
