Mexican Polenta Pizza

Ingredients: – 1 cup polenta (cornmeal) – 3 cups water or vegetable broth – Salt and pepper to taste – Olive oil for greasing

– 1 cup salsa – 1 cup cooked black bean – 1 avocado, sliced – 1 cup shredded cheese (Mexican blend or cheddar) – Optional toppings: sliced jalapeños, diced tomatoes, chopped cilantro, sour cream

1. Cook polenta according to package instructions. 2. Spread cooked polenta onto a greased baking sheet to form a crust.

3. Top polenta crust with refried beans, salsa, cooked ground beef or chicken, and shredded cheese. 4. Add sliced bell peppers, onions, and jalapeños for extra flavor.

5. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly. 6. Garnish with chopped cilantro and diced tomatoes before serving.
